Chocolate-Dipped Potato Chips

Be still, my sweet and salty heart.

If you’ve ever wondered what chocolate and potato chips taste like together, the answer is delicious. And if you can’t tell, this recipe is rather simple.

In fact, I’m not even going to post it. If you can’t figure it out from the pictures, you should seriously consider re-enrolling the first grade. Unless, of course, you’re blind – in which case it’s totally cool if you email me for the recipe. Sorry to offend you, and be careful crossing the street.

The primary reason I love making things with chocolate so much is that my ex-husband was disgusted by it. I know – what kind of a person does not appreciate the pure, divine bliss that is chocolate? An idiot, obviously.

That really should have tipped me off that there was something wrong with him. In my next personal ad, I will be sure to add a disclaimer: “Chocolate haters need not apply.” Best to put the important filters front and center.

For those of you wondering, this is what I did with my free time yesterday. I contemplated folding the laundry, but combining potato chips with chocolate just seemed more urgent. I hear wrinkles are coming in style, anyway. I’m just being avant-garde, people.

In a completely unrelated story, why don’t I have any dates lined up for this week?

In any case, you should all try these. Refrigerate them to let them set. Or just eat them as you dip. I won’t judge.

…and on a completely serious note, we are getting dangerously close to what would have been my one-year wedding anniversary. I hope that everyone is looking forward to reading a tearjerker in four days.

And if you’d like to send sympathy cards and mass quantities of chocolate, contact my people. We’ll get something set up.

Kid-Friendly Valentine Snacks

When people asked me what I wanted to be when I grew up, I always had the same, immediate answer: “I WANNA BE A MOM!”

Though being a mom is (hopefully) not in the cards for me over the next few years, I am enamored by children. Yes, the inappropriate, sex-toy-blogging lady loves kids. Why is that so hard to believe?

To pump the brakes on my burning uterus, I volunteered myself for an amazing opportunity to teach kids how to cook with healthy, sustainable ingredients. I am conducting an activity station for any little guys who want to join me this weekend, where I will be helping them to make these delicious, nutritious snacks. If it was up to me, I’d add chocolate chips, too (but some of these moms be crazy and might hunt me down if I feel their children chocolate).

I feel like this is going to prepare me for motherhood. I am totally going to be the mom who sneaks nutrition into her children, and possibly dresses them as tiny gangsters on their first Halloween. They make gold chains in baby size, right?

Here is the recipe for these super simple, kid-friendly snacks that are perfect for V-day! (Serves 2-3 kids for a snack)

3 Tbsp nut butter (I used almond)
2 tsp honey (omit if making for very small children)
4 tsp nonfat dry milk
1/4 tsp ground cinnamon
4 tsp 100% apple juice
2 Tbsp dried cherries
5 tsp rolled oats
4 tsp wheat germ
4 tsp shredded coconut, dyed pink and red

Mix nut butter and honey (if using) thoroughly. Add dry milk and mix. Add cinnamon, apple juice, cherries, oats, and wheat germ and mix. Form into small balls with hands. Roll in coconut. Refrigerate & enjoy!

Afternoon Delight: Cheddar-Apple Quesadillas

Ah, snacktime. My second favorite kind of afternoon delight. If only I could enjoy these cheesy apple quesadillas after a… different kind of snack.

In the absence of an eligible bachelor, I’ll still eat them. Even if I didn’t work up a sweat to earn it.

Chocolate-Cherry-Cream Cheese Panini Bites

This week, there was a serious re-org at work. Everyone is in chaos-mode and going a little nuts. The crazy appears to have rubbed off on my family, which has also decided to implode. Good thing I’ve got these sweet little mamas to get me through Tuesday.

I stole this recipe from Ellie Krieger (again), except I used honey wheat bread and cherry preserves. After all, cherries and chocolate are the keys to my heart. Along with a tall, scruffy brunette and some patent pumps. Maybe throw some wine in there, too.

These bits of bliss are as easy as one…

Two…

Three.

Stick ’em on the stove and enjoy.  Have a very tasty Tuesday!
